Greek Meze – with Giannis Tsakiris

Course summary: During this class, you will learn how to prepare and cook a Greek mixed mezze platter perfect for sharing with friends and family or impressing your partner on Valentine’s Day.
* Tyropitakia – Small filo triangles filled with feta, mozzarella & oregano
~ Firstly, we will prepare the cheese filling, adding the herbs and ingredients according to the recipe from my home Island in Greece, with the addition of mozzarella for texture. Working with Filo pastry is a skill and we will show you how to keep it pliable and shape it into the traditional triangles.
* Marinated jumbo prawns – We will show you how to prepare Shellfish, in this case, large Prawns. We will take the shells off and remove the vein from the back of the prawn. We will make the delicious coriander & garlic marinade and finally cook them on a skillet or plancha.
* Beef meatballs in Greek tomato sauce – I will share with you my highly popular secret meatball recipe and we will prepare them with the herbs and spices to acquire the texture and flavour of Greek meatballs to bake in the oven. Then, we will prepare my Greek tomato sauce.
We will eat all the above with imported, authentic Greek pitta bread for lunch. Please bring a container if you wish to take any food home with you. Price includes all cooking equipment, ingredients, and lunch.
Student/Chef ratio: A maximum of 8:1 so you’re assured of plenty of personalised instruction.
All equipment is provided, including an apron.
A folder for your course will be provided.
Tea or coffee is provided during the introduction. Other drinks are available to buy.
Requirements: For safety purposes legs should be covered, a plain top with no ‘dangly’ parts and a good pair of flat shoes should be worn.
Course attendees must be 16 years of age or older.
